Strawberry Lemon Mug Cake


Makes 1 mug cake

¼ cup all-purpose flour

1 Tbs. granulated sugar

½ tsp. baking powder

⅛ tsp. salt

1 large egg, lightly beaten

1 Tbs. vanilla almond milk

¼ tsp. lemon extract paste

¼ tsp. lemon zest

2 Tbs. Darbo strawberry fruit spread

Cooking spray

Whipped cream (optional)


In a medium bowl, whisk the dry ingredients. In a separate bowl, mix the egg, milk, lemon extract and lemon zest. Add the wet ingredients to the dry ingredients and mix until combined. Spoon the jam into the batter and stir until the jam is swirled throughout the batter. Coat the inside of an 8 oz microwave-safe mug with cooking spray and pour the batter into the mug. Microwave on high for 40 seconds, and test for doneness. Microwave for additional 10-second intervals until a cake tester comes out clean. Let cool for 30 seconds, and top with whipped cream.
