The production process
The fruit delivered is selected rigorously and then checked to ensure that only the highest quality enters the production process. Then the fruit is carefully heated, the sugar crystals added in and the mixture blended.
Lemon juice is added, and at this point the jam is stirred, very gently, in big agitation vats. As soon as it is perfectly set, drawing off can begin.
The preserve, still warm, is poured into sterilised jars and sealed in a steam vacuum chamber. Sterilisation follows quickly, then the jars are immediately cooled, labelled and packed ready for delivery. Our own laboratory takes samples all the time for quality analysis.
